Quick lunch filled with flavor zucchini Pie. You can have it with a salad of any kind to complete this meal. Zucchini pie is one of my favorite meals. I love to make the crust when I can because it truly makes a difference. But, if I don’t have enough time, buy a good store phylo dough, pie-crust or puff pastry.
Ingredients
- 4 or 5 zucchini sliced
- 2 medium onions julienned
- 1/2 cup parmesan cheese grated
- 4 eggs lightly beaten
- salt and pepper to taste
- 2 tbsp butter
- 1 package puff pastry you can make your crust too (I sometimes do if I have time.)I will post a crust recipe too so you can have this option.
Instructions
- In a saucepan melt the butter 2- Add the onions and simmer until transparent 3- Add the sliced zucchini and mix with the onions. Add salt and pepper. Simmer for 40 minutes or until they are soft but not mushy mixing in between 4- Let cool 5- Add the parmesan cheese and the eggs. Mix well 6- Add to the crust
